Pecorino (from pecora, meaning ‘sheep’) is not a grape native to the area, but rather it is a grape native to Arquata del Tronto, located on the Sibillini mountains on the border between Marche and Abruzzo. Shepherds once who moved their flock from the mountains to the sea with the arrival of autumn. These small "migrations" called transhumance, have allowed the birth of small inhabited centres, commercial activities, as well as the spread of Pecorino itself. Spontaneous fermentation in stainless steel with maceration on the skins for two days, than aged in a mix of stainless still and concrete vats.
