A distinctive Tuscan white made from 80% Trebbiano and 20% Malvasia, sourced from old vineyards around San Gimignano. The grapes are harvested in early October, de-stemmed and co-fermented in concrete with around 15 days of skin contact. Fermentation occurs spontaneously with indigenous yeasts, followed by ageing in concrete tanks before bottling, without filtration and with only minimal sulphur additions.
The result is a textured and savoury wine with notes of stone fruit, dried herbs, citrus peel and wildflowers, supported by gentle tannins, vibrant acidity and a long mineral finish. Rustic yet precise, Fallanze is a beautifully honest expression of traditional Tuscan white winemaking.
